Frog Eye Salad, also known as Mach Salad, is a sweet and fluffy fruit salad that is really more like a dessert. Made with tiny Acini de Pepe pasta, pineapple, mandarin oranges, marshmallows, and Cool Whip, it has a creamy texture and a fun appearance that makes it especially popular with kids.
The pasta is cooked first, then combined with a simple egg-and-fruit-juice custard before the fruit is added. After chilling overnight, Cool Whip and marshmallows are gently folded in to create a light and creamy salad. It is a wonderful make-ahead dish for summer barbecues, potlucks, holidays, and family gatherings.
