This Bacon Honey Mustard Potato Salad is our take on a German-style potato salad, combining crispy bacon, roasted potatoes, fresh parsley, and a sweet-and-tangy honey mustard dressing. The potatoes are roasted right in the bacon drippings, giving them a delicious savory flavor and crisp edges.
The dressing brings together red wine vinegar, Dijon mustard, honey, garlic, and olive oil for a bright contrast to the smoky bacon and roasted potatoes. It’s an easy side dish that’s especially good with grilled meats, sausages, or burgers and makes a flavorful change from traditional creamy potato salad.
