Potato Slices with Bacon

Ingredients

  • 4 russet potatoes medium
  • 6 strips of bacon
  • 1 cup cheddar cheese shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Ranch seasoning Dressing Mix commercial or homemade (see our Ranch Dressing mix)
  • to taste salt
  • to taste pepper
  • Fresh chives for garish optional

Instructions

  • Preheat your oven to 425 ° F.
  • Wash and slice the potatoes into 1/4 inch slices
  • Spread the potato slices on a sheet pan.
  • Drizzle olive oil over the slices and sprinkle with garlic powder, onion powder, salt and pepper. Also Ranch Seasoning if using.
  • Bake for 25 minutes, flipping halfway through.
  • Cook the bacon in a skillet until crispy, then crumble it.
  • Top the baked potatoes slices with cheddar cheese and crumbled bacon.
  • Bake for another 5 minutes until the cheese is melted.
