Creamy Reuben Soup
Ingredients
For the Soup
- 2 tablespoons butter
- 1 medium onion diced
- 3 cloves garlic minced
- 3 tablespoons all-purpose flour
- 4 cups beef broth or vegetable broth
- 1 cup milk or cream for extra richness
- 2 cups cooked corned beef shredded or diced
- 1½ cups sauerkraut rinsed and well drained
- 1 cup shredded Swiss cheese
- 1 teaspoon caraway seeds optional, for a rye-bread flavor
- Salt to taste
- Pepper to taste
For Topping
- Thousand Island dressing to taste
- Rye croutons to taste
- Sauerkraut to taste
- Chopped fresh dill or parsley to taste
Instructions
Sauté the onion and garlic:
- Melt the butter in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 3–4 minutes, until softened. Add the garlic and cook for about 30 seconds.
Make the base:
- Sprinkle the flour over the onion mixture and stir well. Cook for about 1 minute, stirring constantly.
Add the broth and dairy:
- Gradually whisk in the beef broth to prevent lumps. Add the milk or cream and stir until well combined.
Add the Reuben ingredients:
- Stir in the corned beef, sauerkraut, and caraway seeds, if using. Bring the soup to a gentle simmer and cook for about 5 minutes, stirring occasionally.
Add the cheese:
- Reduce the heat to low. Stir in the shredded Swiss cheese a little at a time until melted and the soup is creamy and smooth. Do not let the soup boil after adding the cheese.
Season and serve:
- Taste and add salt and pepper as needed. Ladle into bowls and top with Thousand Island dressing, rye croutons, additional sauerkraut, and chopped dill or parsley.
