Salmon Rolled in Butter and Spinach is a beautiful way to turn a salmon fillet into an impressive dinner. A large salmon fillet is opened, seasoned, spread with softened butter, and rolled into a cylinder before being sliced into individual portions. The salmon rolls are then browned in a skillet and finished in a creamy spinach sauce with onion, garlic, parsley, and lemon.
The rolling technique gives each serving an attractive presentation while also allowing the salmon to cook with plenty of buttery flavor. After the salmon is browned, the same skillet is used to build the sauce, combining tender spinach, garlic, onion, and heavy cream with the flavorful bits left behind from the salmon.
Fresh lemon adds a bright finish to the rich butter and cream sauce, while parsley provides a touch of freshness. The result is a comforting salmon dinner that feels special enough for guests but is still made in one skillet.
Serve the salmon rolls with rice, roasted potatoes, pasta, or crusty bread to soak up the creamy spinach sauce. If you’re looking for a different way to prepare salmon, this recipe offers both an attractive presentation and plenty of rich, savory flavor.
