German Potato Salad

German Potato Salad is a classic warm potato salad made with tender red potatoes, crispy bacon, onions, and a tangy vinegar dressing. Unlike creamy American potato salads, this version gets its rich flavor from bacon drippings and a sweet-and-tart dressing made with cider vinegar, sugar, and seasonings.

The potatoes are gently warmed in the skillet with the bacon and dressing before being finished with fresh parsley. Serve it warm or at room temperature as a hearty side dish for grilled meats, sausages, barbecues, picnics, or any German-inspired meal.

A classic German-style potato salad made with tender red potatoes, crispy bacon, onions, and a sweet-and-tangy cider vinegar dressing. Served warm with fresh parsley, it's a flavorful alternative to creamy potato salad.

Ingredients

  • 3 lbs potatoes medium red
  • 5 bacon strips, diced
  • 1 onion medium onion, chopped
  • ¼ cup flour all-purpose
  • 2 teaspoons salt
  • ¼ teaspoon celery seed
  • ¼ teaspoon pepper
  • ⅓ cup sugar
  • ¾ cup cider vinegar
  • 1 cup water
  • 3 tablespoons parsley fresh , minced

Instructions

  • Place the potatoes in a Dutch oven and cover with water. Bring to a boil, then reduce the heat, cover, and simmer for 25–30 minutes, or until the potatoes are tender.
  • Drain the potatoes and allow them to cool enough to handle.
  • While the potatoes are cooking, cook the diced bacon in a large skillet over medium heat until crisp. Remove the bacon with a slotted spoon and drain on paper towels. Reserve 4 tablespoons of the bacon drippings in the skillet.
  • Add the chopped onion to the bacon drippings and sauté until tender.
  • Stir in the flour, salt, celery seed, and pepper until well combined.
  • Gradually stir in the sugar, cider vinegar, and water. Bring the mixture to a boil over medium-high heat and cook, stirring constantly, for about 2 minutes, or until the dressing has thickened.
  • Cut the cooled potatoes into ¼-inch slices and add them to the skillet along with the cooked bacon.
  • Cook over low heat, gently stirring, until the potatoes and bacon are heated through and coated with the dressing.
  • Sprinkle with fresh parsley and serve warm.
