Cheese-Corn Casserole is a hearty, cheesy dish made with ground beef, sweet corn, green pepper, onion, salsa con queso, and barbecue sauce. Everything comes together in one skillet for an easy meal that’s full of savory flavor with a little kick from the chili powder.
This is a wonderfully simple recipe for those nights when you want something filling without spending a lot of time in the kitchen. The ground beef is browned with onion and green pepper, then combined with corn, creamy cheese sauce, barbecue sauce, and chili powder. After simmering to bring the flavors together, the casserole is topped with crunchy corn or tortilla chips for a satisfying contrast to the creamy, cheesy filling.
Serve it as a hearty main dish or alongside grilled meats, barbecue, or other favorite family-style dishes. It’s also a convenient choice for casual gatherings, potlucks, or a weeknight dinner when you want something comforting and easy.
