How to velvet Shrimp for stir-fry

Velveting is Chinese technique to tenderize and add flavor.Slightly different techniques apply to shrimp, pork, chicken, and beef. Remember this is the tenderizing stage, you will use the shrimp in your stir-fry.

Ingredients
- 1-2 pounds shrimp peeled and deveined
- 2 tablespoons sugar
- 1 tablespoon salt
- 1 teaspoon baking soda
- 1 cup ice water
- 1 cup ice
Instructions
- Place your shrimp into a large mixing bowl, and add sugar, salt and baking soda. Gently massage the ingredients into the shrimp.
- Add ice water and ice to the bowl, and stir everything together. Let your shrimp sit for 1-2 hours, or even overnight in the refrigerator.
- When you’re ready to use the shrimp, run cold water into the bowl, gently stir the shrimp, and pour the water out. Repeat this twice to remove excess salt, sugar and baking soda.
- Drain. The shrimp are now ready to use.
