Ingredients
- 2 tablespoons olive oil
- 1 onion medium yellow, diced
- 1 ½ cups bell pepper diced
- ½ cup celery diced
- 4 ounces sausage diced small
- 1 tablespoon Creole seasoning
- 1 ½ teaspoons kosher salt
- ½ teaspoon black pepper freshly ground
- 1 tablespoon flour
- 2 cups beef broth
- 8 ounces spaghetti
- 1 teaspoon Worcestershire sauce
- 1 tablespoon tomato paste concentrate
- ½ cup green onions sliced for garnish
Instructions
- Add 2 tablespoons olive oil to a deep skillet and set over medium-high heat. Add 4 ounces sausage, and cook, stirring, for 3 or 4 minutes.
- Once sausage is browned, add 1 onion,1 1/2 cups bell pepper,1/2 cup celery, stirring, for 2 more minutes. Season with 1 tablespoon Creole seasoning, 1/2 teaspoon black pepper, and 1 1/2 teaspoons kosher salt, and cook, stirring, for 1 to 2 minutes more. Add 1 tablespoon flour to meat mixture and cook for 1-2 minutes to create a roux.
- Add 2 cups beef broth,1 teaspoon Worcestershire sauce,1 tablespoon tomato paste and 1/2 cup green onions. Simmer until the sauce is thick and saucy.
- Combine the cooked 8 ounces spaghetti into the skillet and toss until fully coasted.
- Serve hot, some add cheddar or Parmesan cheese on top.
