Definitely a worthy seafood bisque! This rich and creamy soup combines shrimp, crab, mushrooms, creamed corn, Cajun seasoning, and a touch of white wine for a flavorful coastal-style dish. It's substantial enough to serve as a light meal and makes a generous batch for sharing.

Ingredients

  • 2 cans cream of mushroom soup undiluted (10¾ oz each)
  • 1 can condensed cream of celery soup undiluted (10¾ oz)
  • 2 cups heavy cream
  • 4 green onions chopped
  • ½ cup celery finely chopped
  • 1 clove garlic minced, or more to taste
  • 1 teaspoon Worcestershire sauce
  • 1½ pounds uncooked medium shrimp peeled and deveined
  • 1 can crab meat 6 oz, drained, flaked, and cartilage removed
  • 4½ oz mushrooms sliced
  • 3 tablespoons chicken broth
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 can creamed corn 16 oz
  • 1½ teaspoons Tony’s Cajun seasoning
  • 1 teaspoon Old Bay seasoning
  • ¼ cup white wine
  • ¼ teaspoon hot pepper sauce optional

Optional toppings

  • thinly sliced green onions
  • ½ cup Parmesan cheese grated

Instructions

Make the soup base:

  • In a large Dutch oven, combine the cream of mushroom soup, cream of celery soup, heavy cream, chopped green onions, celery, garlic, Worcestershire sauce, chicken broth, salt, pepper, creamed corn, Cajun seasoning, Old Bay seasoning, white wine, and optional hot pepper sauce.

Heat the base:

  • Stir well and bring the mixture to just below a full boil. Do not allow it to boil vigorously.

Add the seafood and mushrooms:

  • Reduce the heat and add the shrimp, crab meat, and sliced mushrooms. Stir gently to combine.

Simmer:

  • Cook uncovered for about 30 minutes, stirring occasionally, until the shrimp are cooked through and the mushrooms are tender.

Serve:

  • Ladle the bisque into bowls and garnish with sliced green onions and Parmesan cheese, if desired.

Enjoy:

  • Serve with sourdough bread for dipping.

Notes

Suggest using enameled cast iron dutch oven.
Suggest serving with sour dough bread.
