Bacon Pepper Jack Meatloaf Stuffed Onion Bombs

Ingredients
- 4 yellow onions large
- 1 lb ground beef
- 6 strips of bacon cooked, divided, 4 used for wrapping, 2 used crumbled in mixture
- 1 cup shredded pepper jack cheese
- ¼ cup breadcrumbs
- ¼ cup green onions chopped
- ¼ cup mayonnaise
- 2 tablespoons sriracha sauce
- to taste Salt
- to taste Pepper
- toothpicks
- 2 each Eggs beaten
- 2 tablespoons BBQ sauce
Instructions
- Preheat your oven to 400° F. Peel the onions and cut off the tops and bottoms.
- Cut the onions in half horizontally and carefully remove the inner layers, leaving about 2-3 layers intact.
- In a bowl, mix together the ground beef, crumbled bacon, shredded pepper jack cheese, breadcrumbs, chopped green onions, salt, and pepper.
- Stuff each onion half with cheeseburger mixture. Wrap each with a strip of bacon. Secure the stuffed onions with toothpicks.
- Place the stuffed onions on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the beef is cooked through and the onions are tender. In a small bowl, mix together the mayonnaise and sriracha sauce to make a bang-bang sauce. Serve the stuffed onion bombs drizzled with the sauce. Enjoy.
