Ingredients

  • 3 chicken breasts large
  • 1 tablespoon olive oil + a more for the pan
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • ¾ teaspoon onion powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried dill

Instructions

  • Cut each chicken breast into 4-5 long pieces down the length.
  • In a medium bowl, combine 1 tablespoon of olive oil, vinegar lemon juice, garlic, salt, oregano, onion powder, pepper, dill and thyme. Mix well, then cover and chill for 30 minutes or up to 6 hours.
  • Heat a little more oil in a large frying pan or skillet over medium heat.
  • Add half the chicken, letting a little marinade drain off first, and cook, turning often until just cooked through – about 8 minutes. Repeat with remaining chicken. The temperature of cooked chicken is 165° F.
