Asian Spaghetti is a quick and easy noodle dish that combines familiar spaghetti with crisp-tender vegetables and a simple savory Asian-inspired sauce. Fresh mushrooms, snow peas, shredded carrots, and green onions are quickly sautéed until they are tender but still have a little crunch. The vegetables are then tossed with spaghetti and a simple combination of reduced-sodium soy sauce, sugar, and cayenne pepper before being finished with toasted sesame seeds.
We love this recipe because of the bright, fresh vegetables and the way they add both color and texture to the spaghetti. The snow peas and carrots are especially good when they are cooked just until crisp-tender, but this is also a very forgiving recipe. You can easily substitute whatever vegetables you have on hand, making it a great way to use up vegetables in the refrigerator.
Asian Spaghetti also makes a versatile meal because you can serve it as a side dish or turn it into a complete one-pan dinner. Add sliced chicken, leftover pulled pork, shrimp, or another protein you enjoy. You can also adjust the cayenne to make the dish as mild or spicy as you like.
With only about 30 minutes from start to finish, this Asian-inspired spaghetti is an easy choice for a busy weeknight. It is simple enough for a quick family dinner, but flavorful enough that you may find yourself making it whenever you are looking for an easy vegetable noodle dish.
