Slow Cooker Mongolian Ground Beef Chow Mein

Mongolian ground beef chow mein combines browned ground beef, savory-sweet hoisin-soy sauce, and crisp vegetables, slow-cooked for 4-5 hours on low.

Ingredients
- 1 ½ lbs. ground beef
- 3 cloves garlic minced
- 4 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon ginger grated fresh
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes Optional for a little spice add or subtract to your preference.
- ¼ cup brown sugar
- ½ cup beef broth
- 1 onion large, thinly sliced
- 14 oz. coleslaw mix 1 bag, without dressing
- 8 oz chow Mein noodles cooked according to package directions
- To taste Sesame seed and sliced green onion for garnish
Instructions
- Brown the 1 ½ lbs. ground beef in a skillet over medium-high heat. Halfway through, add the 3 cloves garlic so it turns nicely golden but not burnt. Once the beef is fully cooked and crumbled, drain any excess grease and transfer the beef and garlic to your slow cooker.
- In a small bowl, whisk together 4 tablespoons soy sauce, 2 tablespoons hoisin sauce 1 tablespoon sesame oil, 1 tablespoon ginger, ½ teaspoon black pepper, ¼ teaspoon red pepper flakes (if using), ¼ cup brown sugar , and ½ cup beef broth until well combined. Pour sauce over the beef in the slow cooker.
- Add the thinly slice 1 onion and stir well to insure flavors are mingling.
- Cover and cook on low for 4-5 hours, may do on high for 2-3 hours, if necessary.
- About 30 minutes before finishing the cook session, add in the 14 oz. coleslaw mix. Limit the time so a little crunch remains.
- Just prior to serving, add the cooked 8 oz chow Mein noodles and mix well, the sauce needs to cover all.
- Garish with a sprinkle of sesame seeds and green onion for garnish. Enjoy
Notes
- For variation swap out the beef for ground turkey or chicken.
- If you trying to get the kids to eat more vegetables, add some snap peas, carrots, or bell peppers in to the mix during the last hour of cooking.
- If you have left overs, use the chow Mein in a tortilla for that quick easy lunch.
