Shrimp Fajita Foil Packs

Ingredients
- 1 ¼ pounds shrimp deveined ,tails and shells removed
- 2 bell peppers, sweet large, sliced 1/2-inch thick
- 1 large onion sliced 1/4-inch thick
- 1 bunch scallions sliced
- 1 teaspoon chipotle chili powder
- ½ cup loosely packed cilantro leaves and tender stems cut
- 2 to 3 limes quartered or lime juice
- 6 flour tortillas 10 inch (6 inch will work, but most will need two)
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Kosher salt
- Salsa and chopped avocado for serving optional
Instructions
Prepare ahead Shortly before assembly, Prepare the ingredients for the participants.
- Devein and remove shells and tails from shrimp. Place in bowl.
- Remove the top of the Bell Peppers, remove the seeds and membranes, then slice into ½ inch strips, place into small bowl. Use what you have but Green, Yellow, and Red add color and appeal.
- Clean and slice Green Onion/Scallions from 1 bunch, place in a small bowl.
- Quarter 2 to 3 limes. Place in small bowl. Alternatively the individual can use a small amount of lime juice.
- Slice a large onion into half, then slice into ¼ inch thick separating in pieces. Place in a small bowl.
- Place into a bowl, approximately ½ cup of cilantro (leaves and tender stems), after cutting into serving size pieces.
- For serving, slice or chop avocado(s) into bowl.
- Refrigerate the ingredients till assembly time.

Assembly time
- Preheat your oven or grill to 375°F
- Place the prepared ingredients on table or counter, available to the participants.
- Prepare sheet of heavy-duty aluminum foils, each about 18 x 18 inches in size.
- Each person can select and place their desired ingredients on top of the foil. We find about 7 shrimp is reasonable for each person. Season with the spices of choice. Each should add a small amount of olive oil over the ingredients.
- To fold the foil packet: Bring two opposite edges of the foil up to meet in the center, then fold them together down a few times to create a tight seal. Next, fold the remaining two open edges tightly towards the center to complete the foil packet. Ensure there are no gaps or openings for steam to escape. Mark each so the right packet goes to the right person.
- Place the foil packet directly on the oven rack and cook for 12 to 15 mins in oven.
- While waiting, using a skillet heat up (cook) the tortillas, slightly browning each on both sides. Place on each person's plate., Just prior serving the packets from the oven.
- Carefully remove the foil packets from the oven using oven mitts or heat-resistant gloves, as they will be hot.
- If serving, place the salsa and avocado out on table.
- Serve the packets to each person. Be cautious of the hot steam when opening. Depending on level of formality, serve from the packet, or place contents on plates on top of the tortilla.
Notes
As with most of our “foiled” recipes we make it fun and interactive for more than one. Increase the amounts by the number of guests. Each guest gets to assemble their own packet – controlling the spice and its amount and adjusting for possible food allergies. For some cilantro has the taste of soap, so they will omit that ingredient.
