Instructions
Cut the green peppers into ¾- to 1-inch-thick slices to form rings. Remove the membranes and seeds. Set the rings aside.
Heat the olive oil in a skillet over medium heat. Add the onion, garlic, and mushrooms. Cook until the vegetables are slightly browned and tender. Transfer the vegetables to a bowl and allow them to cool.
Add the meat and Creole seasoning to the cooled vegetable mixture. Stir to combine.
Add the beaten egg and mix well.
Add the flour and mix until the filling is well combined.
Place the pepper rings in an unheated skillet. Fill each ring with the meat mixture.
Cover the skillet and cook over medium heat for 6–8 minutes. Carefully turn the stuffed pepper rings over, cover, and cook for an additional 7 minutes, or until the meat is cooked through.
If desired, sprinkle the rings with shredded cheese. Cover and cook for another minute or two, just until the cheese melts.
Remove from the skillet and serve hot.
Notes
Depending on the size of your pepper rings, you may need more or less filling. You may have a small amount of filling left over.
