⅔cupmilk
Instructions
In a medium bowl, combine the Bisquick baking mix and milk. Stir just until a soft dough forms. Do not overmix.
Bring your stew, soup, sauerkraut, or other dish to a simmer. Drop the dumpling dough by spoonfuls onto the surface of the simmering liquid.
Reduce the heat to medium and cover tightly with a lid. A wok is preferred because its wide surface area provides plenty of room for the dumplings and heats evenly.
Cook for 11 minutes without removing the lid. If possible, use a glass lid so you can check the dumplings without letting the steam escape.
Remove the lid after 11 minutes and serve immediately.
Notes
NotesCheck the expiration date on your Bisquick baking mix. We find that newer baking mix produces better-rising dumplings. The “No Peek” part is important. Keep the lid closed during cooking so the steam stays trapped and the dumplings cook properly. These dumplings are delicious on top of stews, soups, smothered chicken, and sauerkraut. We especially enjoy them with sauerkraut as part of our good-luck dinner.
