A hearty lasagna soup made with Italian sausage, ground beef, onions, garlic, chicken broth, and lasagna noodles. The Italian sausage provides the signature flavor.
Using a large pot, begin by browning1 lb ground Italian sausage and 1 ½ lbs ground beef over medium-high heat. Break it apart as it cooks, letting it develop those crispy brown bits on the bottom of the pan.
Once it’s browned (usually takes around 10 minutes) spoon out some of the excess fat, leaving enough to cook your onions. Drop the diced 1 onion into the sausage, let them soften and become translucent.
When the onion start looking glossy, add 3 cloves garlic. A couple of minutes will bring out the aromatics.
Lower the heat, Add in the 4 cups chicken broth.
Add 8 to 10 lasagna noodles. Simmer for a few minutes so the pasta picks up the flavor of the broth.
Serve HOT.
Notes
Note:
The Italian sausage is the key to this soup. Suggest using a flavor your family likes, or use a mixture of sweet and hot to add some zing but not too much so it over powers the other flavors.
