Ingredients

  • 1 ½ cups flour all purpose
  • ½ teaspoon salt
  • 3 tablespoons sugar
  • 1 ½ teaspoons baking powder
  • 6 tablespoons butter or margarine
  • 5 to 6 tablespoons water
  • 16 ounces cream cheese 2 each, 8 0z. packages, softened
  • ¼ cup sugar
  • 1 ½ teaspoons ground cinnamon
  • ⅔ cup honey
  • 4 each eggs

Instructions

Pastry Crust

  • In a medium bowl, stir together the flour, 3 tablespoons sugar, baking powder, and salt.
  • Cut in the butter or margarine until the mixture resembles coarse crumbs.
  • Add the water, 1 tablespoon at a time, stirring until the dough is moistened and begins to come together.
  • Form the dough into a ball.
  • On a lightly floured surface, roll the dough out to fit a 9-inch pie plate.
  • Transfer the dough to the pie plate. Trim the edges to about ½ inch beyond the rim, then flute the edges.
  • Set the prepared crust aside while making the filling.

Honey Cheesecake Filling

  • Preheat the oven to 350°F.
  • In a large mixing bowl, beat the softened cream cheese, ¼ cup sugar, and cinnamon until smooth.
  • Gradually add the honey, beating until well combined and smooth.
  • Add the eggs and beat just until blended. Do not overmix.
  • Pour the filling into the prepared pastry crust.
  • Bake for about 1 hour 10 minutes, or until the filling is set and the center has only a slight jiggle.
  • Remove from the oven and allow the pie to cool completely before serving. Refrigerate if desired for a firmer, chilled cheesecake texture.
