Sour Cream Beef Enchiladas are rich, creamy, cheesy, and easy to make. Shredded beef, sautéed onions, mushrooms, green chiles, garlic, and a touch of cayenne are combined with sour cream and wrapped in soft flour tortillas. The enchiladas are topped with more sour cream, green chile enchilada sauce, and plenty of melted Monterey Jack or
